
#mealprepworthy I am a creature of habit. Totally. I find something I like to eat and I eat a LOT of it. This soup is one of those things, fo sho. What I love about it is...It's super versatile. You got allergies? This is adjustable. (That's actually how I came up with the recipe. It's a healthy adaptation of a heartier one from the Queen, the Pioneer Woman.) You like it hot? ( I like you.) Crank up the heat a little...customize this 'b'.It reheats well and keeps for several days. Need it to be #ketofriendly? Too easy. SO, I make it on a Tuesday and it will provide lunches for me through Friday or Saturday! Hollaaaa! That's cheap, baby!

SO-Good Slow Cooker Chicken Taco Soup! 🍵
🍗🍗2 boneless, skinless chicken breast 🍴1/4 Taco seasoning Garlic Salt to taste Two bell peppers(I like 1 red and 1 yellow) 🍅 28oz can of diced tomatoes 🍅Can of Rotel 🍅 4-6oz of Tomato paste 🍗 3-4cups of chicken broth Dice bell peppers. Add chicken to bottom of the slow cooker and add seasonings (usually a few teaspoons of each). Add diced peppers on top and then add all other ingredients into the pot. Give a nice stir and set to HIGH for 5 1/2 hours, or until your chicken is cooked through! Shred the chicken with 2 forks. Serve, then top with deliciousness! I sour cream, avocado, or cheddar cheese! 😋 It keeps well in the fridge for 4-5 days!
KETO MOD: You can do 2 different things to crank up the fat. 1) Add a block of cream cheese 30 minutes before cooking is done, stir to combine. OR 2) add full fat sour cream to YOUR bowl as a topping and mix it all up with the cheese! MAGICAL!
