Addictive Keto Pancakes/Waffles

On day 4 of this Keto thing I awoke with a strong craving for something sweet for breakfast. I really wanted oatmeal with peanut better, BUT we can't always get what we want can we? *Insert dramatic eye rolling here* SO I tried these magical beasts and my life was changed! They are damn good and pretty easy! Come back later to see how I make these quicker for the everyday morning!

Keto Pancakes of Deliciousness (This recipe is for a single serving, just double or triple for larger batches!) 1/4 cup of almond flour (this shiz is MUCH cheaper at the big box clubs, like BJ's) 2 large eggs 2oz softened cream cheese (I softened it in the microwave, lets be real) Tiny splash of vanilla extract (or lemon zest, or hazelnut, or something) Butter for the pan Swerve confectioner's sugar for dusting (optional)

Mix allllll dat stuff together in a bowl! Heat your pan pretty hot and schmelt the butter on it. Pour about 3tbs or about 1/4 cup of the batter onto the pan and let it cook all brown and scrumptious. I prefer popping these in my favorite mini waffle maker! You can grab one HERE ! Serve with MORE BUTTER (yasssss keto) and a sprinkle of Swerve confectioner's sugar!  EEEAAAAT!
